{"id":8540,"date":"2020-10-30T15:06:52","date_gmt":"2020-10-30T14:06:52","guid":{"rendered":"http:\/\/wenvoe.org.uk\/?p=8540"},"modified":"2020-10-30T15:06:52","modified_gmt":"2020-10-30T14:06:52","slug":"baked-cod-with-garlicky-spinach-and-chick-peas","status":"publish","type":"post","link":"http:\/\/wenvoe.org.uk\/?p=8540","title":{"rendered":"Baked Cod with Garlicky Spinach and Chick Peas"},"content":{"rendered":"<p class=\"Default\"><span style=\"color: #0000ff;\"><em><b><span style=\"font-size: 11.0pt;\">Baked Cod with Garlicky Spinach and Chick Peas <\/span><\/b><\/em><\/span><span style=\"font-size: 11.0pt;\">[ serves two ] <\/span><\/p>\n<p class=\"Default\" style=\"padding-left: 40px;\"><span style=\"font-size: 11.0pt;\">2 cod loins, about 175g each <\/span><\/p>\n<p class=\"Default\" style=\"padding-left: 40px;\"><span style=\"font-size: 11.0pt;\">pinch dried chilli flakes <\/span><\/p>\n<p class=\"Default\" style=\"padding-left: 40px;\"><span style=\"font-size: 11.0pt;\">grated zest and juice of 1 lemon <\/span><\/p>\n<p class=\"Default\" style=\"padding-left: 40px;\"><span style=\"font-size: 11.0pt;\">2 tbsp. chilli oil <\/span><\/p>\n<p class=\"Default\" style=\"padding-left: 40px;\"><span style=\"font-size: 11.0pt;\">1med onion, sliced thinly <\/span><\/p>\n<p class=\"Default\" style=\"padding-left: 40px;\"><span style=\"font-size: 11.0pt;\">1 large clove garlic, finely chopped <\/span><\/p>\n<p class=\"Default\" style=\"padding-left: 40px;\"><span style=\"font-size: 11.0pt;\">400g can of good quality chick peas <\/span><\/p>\n<p class=\"Default\" style=\"padding-left: 40px;\"><span style=\"font-size: 11.0pt;\">250g spinach, washed <\/span><\/p>\n<p class=\"Default\"><span style=\"font-size: 11.0pt;\">Preheat oven to 180C fan. Pat the cod dry, then place them, skin side [if any ] down in a shallow, non-stick roasting tin. Season and sprinkle over the chilli flakes and the lemon zest. Drizzle over half of the oil and bake for 20 mins, until the fish is opaque and cooked through. Meanwhile, heat the remaining oil in a deep non-stick pan or wok and cook the onion for 6-8 mins, stirring often until golden. Add the garlic and cook for a further minute. Tip in the chick peas and warm through for about 2 mins. Add the spinach and cook, stirring occasionaly, for two mins, until wilted. Season and serve with the cod.
