{"id":7720,"date":"2020-06-06T13:44:31","date_gmt":"2020-06-06T12:44:31","guid":{"rendered":"http:\/\/wenvoe.org.uk\/?p=7720"},"modified":"2020-06-06T13:47:26","modified_gmt":"2020-06-06T12:47:26","slug":"american-skillet-on-cornbread","status":"publish","type":"post","link":"http:\/\/wenvoe.org.uk\/?p=7720","title":{"rendered":"American Skillet on Cornbread"},"content":{"rendered":"<p class=\"Default\" style=\"text-align: center;\"><b><span style=\"font-size: 14.0pt;\">MR GREEDY\u2019S KITCHEN &#8211; JUNE\u00a0<\/span><\/b><\/p>\n<p class=\"Default\"><span style=\"font-size: 12pt;\"><b>American Skillet on Cornbread <\/b><\/span><\/p>\n<p class=\"Default\" style=\"padding-left: 80px;\"><span style=\"font-size: 11.0pt;\">1 cup yellow cornmeal <\/span><\/p>\n<p class=\"Default\" style=\"padding-left: 80px;\"><span style=\"font-size: 11.0pt;\">1\/2 cup plain flour <\/span><\/p>\n<p class=\"Default\" style=\"padding-left: 80px;\"><span style=\"font-size: 11.0pt;\">1 tbsp. baking powder <\/span><\/p>\n<p class=\"Default\" style=\"padding-left: 80px;\"><span style=\"font-size: 11.0pt;\">1 tsp. salt <\/span><\/p>\n<p class=\"Default\" style=\"padding-left: 80px;\"><span style=\"font-size: 11.0pt;\">1 cup buttermilk <\/span><\/p>\n<p class=\"Default\" style=\"padding-left: 80px;\"><span style=\"font-size: 11.0pt;\">1\/2 cup full milk <\/span><\/p>\n<p class=\"Default\" style=\"padding-left: 80px;\"><span style=\"font-size: 11.0pt;\">1 large egg <\/span><\/p>\n<p class=\"Default\" style=\"padding-left: 80px;\"><span style=\"font-size: 11.0pt;\">1\/2 tsp. bicarbonate of soda <\/span><\/p>\n<p class=\"Default\" style=\"padding-left: 80px;\"><span style=\"font-size: 11.0pt;\">1\/4 cup + 2 tbsps. shortening <\/span><\/p>\n<p class=\"Default\" style=\"padding-left: 80px;\"><span style=\"font-size: 11.0pt;\">smoked paprika for the top <\/span><\/p>\n<p class=\"Default\" style=\"padding-left: 80px;\"><span style=\"font-size: 11.0pt;\">Shortening is TREX hard cooking fat. St.Ivel Buttermilk, 284ml tub is the exact amount, available Tesco. <\/span><\/p>\n<p class=\"Default\"><span style=\"font-size: 11.0pt;\">You will need a skillet \/strong frying pan suitable for the oven. 26cm diameter. <b><i>(No plastic handles) <\/i><\/b><\/span><\/p>\n<p class=\"Default\"><span style=\"font-size: 11.0pt;\">Preheat the oven 200C. Sieve the cornmeal, flour, baking powder and salt into a large bowl, stir to combine. Measure the buttermilk and milk into a measuring jug and add the egg. Whisk together and add the soda; whisk again. Pour the milk mixture into the dry ingredients. Stir with a fork until well combined. In a small bowl, melt the shortening in the microwave, <b><i>but do not overheat. <\/i><\/b><\/span><\/p>\n<p class=\"Default\"><span style=\"font-size: 11.0pt;\">Slowly add the melted shortening to the batter, stirring until just combined. In the skillet, melt the remaining 2 tbsp of shortening over a medium heat. Pour the batter into the hot skillet. The batter should sizzle. Spread to even out the surface. Cook on the stove top for about a minute. Remove and sprinkle the desired amount of paprika over the top. Transfer to the oven and bake until golden brown, 20 &#8211; 25 minutes. The edges should be crispy.
