{"id":745,"date":"2016-08-31T23:35:35","date_gmt":"2016-08-31T22:35:35","guid":{"rendered":"http:\/\/wenvoe.org.uk\/?p=745"},"modified":"2016-08-31T23:35:35","modified_gmt":"2016-08-31T22:35:35","slug":"mediterranean-style-lamb-stew-with-olives","status":"publish","type":"post","link":"http:\/\/wenvoe.org.uk\/?p=745","title":{"rendered":"Mediterranean-Style Lamb Stew with Olives"},"content":{"rendered":"<p>\n\t<span style=\"font-size:16px\"><strong>Ingredients<\/strong><\/span>\n<\/p>\n<p>\n\t2 tbsp garlic oil\n<\/p>\n<p>\n\t500g lamb neck fillet, or a shoulder cubed\n<\/p>\n<p>\n\t1 onion sliced\n<\/p>\n<p>\n\t3 cloves of garlic finely chopped\n<\/p>\n<p>\n\t125ml dry white wine\n<\/p>\n<p>\n\t1 x 400g chopped tomatoes\n<\/p>\n<p>\n\t2 large strips of orange peel, pith removed\n<\/p>\n<p>\n\t2 good sprigs of thyme\n<\/p>\n<p>\n\tHandful of Kalamata olives\n<\/p>\n<p>\n\t1 large red pepper, seeded and sliced\n<\/p>\n<p>\n\t&nbsp;\n<\/p>\n<p>\n\tHeat 1 tbsp of the oil and brown the lamb all over, remove from the pan and set aside. In the same pan heat the remaining oil, add the onion and cook for about 5 mins until softened. Add the garlic and cook for about 30 secs more. Increase the heat and pour in the wine leave to bubble for about 2 &#8211; 3 mins until reduced by half. Return the lamb to the pan with the tomatoes, thyme, orange peel and 200ml of water. Cover and simmer for about an hour, adding a little water as reqd. Stir to stop it catching. Add the red pepper, olives and cook for a further 15-20 mins un-til peppers have softened.\n<\/p>\n<p>\n\tRemove the orange peel before serving.
