{"id":5965,"date":"2019-05-31T23:03:39","date_gmt":"2019-05-31T22:03:39","guid":{"rendered":"http:\/\/wenvoe.org.uk\/?p=5965"},"modified":"2019-05-31T23:03:39","modified_gmt":"2019-05-31T22:03:39","slug":"thai-grilled-salmon-with-watercress-raita","status":"publish","type":"post","link":"http:\/\/wenvoe.org.uk\/?p=5965","title":{"rendered":"Thai Grilled Salmon With Watercress Raita"},"content":{"rendered":"<p class=\"Default\"><b><span style=\"font-size: 11.0pt;\">THAI GRILLED SALMON WITH WATERCRESS RAITA <\/span><\/b><\/p>\n<p class=\"Default\" style=\"padding-left: 90px;\"><span style=\"font-size: 11.0pt;\">100g watercress, roughly chopped <\/span><\/p>\n<p class=\"Default\" style=\"padding-left: 90px;\"><span style=\"font-size: 11.0pt;\">18 fresh mint leaves <\/span><\/p>\n<p class=\"Default\" style=\"padding-left: 90px;\"><span style=\"font-size: 11.0pt;\">generous pinch of salt <\/span><\/p>\n<p class=\"Default\" style=\"padding-left: 90px;\"><span style=\"font-size: 11.0pt;\">2 large cloves of garlic, crushed <\/span><\/p>\n<p class=\"Default\" style=\"padding-left: 90px;\"><span style=\"font-size: 11.0pt;\">2 green chillies, cut in half and deseeded <\/span><\/p>\n<p class=\"Default\" style=\"padding-left: 90px;\"><span style=\"font-size: 11.0pt;\">3tbsp. fresh lime juice <\/span><\/p>\n<p class=\"Default\" style=\"padding-left: 90px;\"><span style=\"font-size: 11.0pt;\">1tbsp. caster sugar <\/span><\/p>\n<p class=\"Default\" style=\"padding-left: 90px;\"><span style=\"font-size: 11.0pt;\">1tbsp peeled and chopped root ginger <\/span><\/p>\n<p class=\"Default\" style=\"padding-left: 90px;\"><span style=\"font-size: 11.0pt;\">1tbsp fish sauce <\/span><\/p>\n<p class=\"Default\" style=\"padding-left: 90px;\"><span style=\"font-size: 11.0pt;\">4 x 175g salmon fillets <\/span><\/p>\n<p class=\"Default\" style=\"padding-left: 90px;\"><span style=\"font-size: 11.0pt;\">lime wedges to serve <\/span><\/p>\n<p class=\"Default\" style=\"padding-left: 90px;\"><span style=\"font-size: 11.0pt;\">For the raita. <\/span><\/p>\n<p class=\"Default\" style=\"padding-left: 90px;\"><span style=\"font-size: 11.0pt;\">200ml Greek yoghurt <\/span><\/p>\n<p class=\"Default\" style=\"padding-left: 90px;\"><span style=\"font-size: 11.0pt;\">100g watercress, finely chopped <\/span><\/p>\n<p class=\"Default\" style=\"padding-left: 90px;\"><span style=\"font-size: 11.0pt;\">1 clove of garlic, finely chopped <\/span><\/p>\n<p class=\"Default\" style=\"padding-left: 90px;\"><span style=\"font-size: 11.0pt;\">salt and fresh black pepper <\/span><\/p>\n<p class=\"Default\"><span style=\"font-size: 11.0pt;\">Place the watercress, mint, salt, garlic and chillies in a food processor and whiz until finely chopped. Add the lime juice, caster sugar, ginger and fish sauce, then process to make a paste. Evenly coat each salmon fillet with the paste, cover with cling film and leave in the fridge for at least 20-30 minutes. Meanwhile, mix together the raita ingredients, season and chill. Cook the salmon on a hot griddle, or a heavy based pan for about 4-5 minutes on each side. Serve topped with a dollop of raita and with lime wedges.
