{"id":3901,"date":"2017-10-30T23:54:22","date_gmt":"2017-10-30T22:54:22","guid":{"rendered":"http:\/\/wenvoe.org.uk\/?p=3901"},"modified":"2017-10-30T23:54:22","modified_gmt":"2017-10-30T22:54:22","slug":"pumpkin-cake-with-cream-cheese-frosting","status":"publish","type":"post","link":"http:\/\/wenvoe.org.uk\/?p=3901","title":{"rendered":"Pumpkin Cake with Cream Cheese Frosting"},"content":{"rendered":"<p>\n\t<strong>Pumpkin Cake with Cream |Cheese Frosting<\/strong>\n<\/p>\n<p>\n\t<span style=\"font-size:16px\">250g plain flour<\/span>\n<\/p>\n<p>\n\t<span style=\"font-size:16px\">3 tsp baking powder<\/span>\n<\/p>\n<p>\n\t<span style=\"font-size:16px\">2 tsp bicarbonate of soda<\/span>\n<\/p>\n<p>\n\t<span style=\"font-size:16px\">pinch of salt<\/span>\n<\/p>\n<p>\n\t<span style=\"font-size:16px\">2 tsp ground cinnamon<\/span>\n<\/p>\n<p>\n\t<span style=\"font-size:16px\">400g caster sugar<\/span>\n<\/p>\n<p>\n\t<span style=\"font-size:16px\">250ml vegetable oil<\/span>\n<\/p>\n<p>\n\t<span style=\"font-size:16px\">1 tsp vanilla extract<\/span>\n<\/p>\n<p>\n\t<span style=\"font-size:16px\">500g tinned pumpkin puree [<em>see Mr Greedys tip<\/em>]<\/span>\n<\/p>\n<p>\n\t<span style=\"font-size:16px\">4 large eggs<\/span>\n<\/p>\n<p>\n\t<span style=\"font-size:16px\">125g chopped walnuts<\/span>\n<\/p>\n<p>\n\t<span style=\"font-size:16px\">Preheat oven to 180C. Prepare and line the base of a 20 x 30cm cake tin. Sift together the flour, baking powder, bi-carb of soda salt and cinnamon, set aside. In a large bowl, combine the sugar and oil. Blend in vanilla and pumpkin puree, then beat eggs in one at a time. Gradually beat in flour mixture. Stir in nuts. Spread batter into prepared tin.Bake in preheated oven for 30 &#8211; 35 mins or until a knife inserted into the centre comes out clean. Cool on a<\/span>\n<\/p>\n<p>\n\t<span style=\"font-size:16px\">wire rack, remove parchment and cover with the cream cheese frosting.<\/span>\n<\/p>\n<p>\n\t<span style=\"font-size:16px\"><strong>Cream cheese frosting <\/strong><\/span>\n<\/p>\n<p>\n\t<span style=\"font-size:16px\">50g butter, room temperature,<\/span>\n<\/p>\n<p>\n\t<span style=\"font-size:16px\">225g cream cheese,<\/span>\n<\/p>\n<p>\n\t<span style=\"font-size:16px\">450g icing sugar,<\/span>\n<\/p>\n<p>\n\t<span style=\"font-size:16px\">2 tsp of vanilla extract.<\/span>\n<\/p>\n<p>\n\t<span style=\"font-size:16px\">Sift icing sugar into a bowl. In another bowl beat the butter and cream cheese together until smooth and creamy. Add the sifted icing suger and vanilla ex-tract and beat until smooth.
