{"id":3898,"date":"2017-10-30T23:54:49","date_gmt":"2017-10-30T22:54:49","guid":{"rendered":"http:\/\/wenvoe.org.uk\/?p=3898"},"modified":"2017-10-30T23:54:49","modified_gmt":"2017-10-30T22:54:49","slug":"afternoon-pear-cake","status":"publish","type":"post","link":"http:\/\/wenvoe.org.uk\/?p=3898","title":{"rendered":"Afternoon Pear Cake"},"content":{"rendered":"<p>\n\t<span style=\"font-size:16px\"><strong>Afternoon Pear Cake <\/strong><\/span>\n<\/p>\n<p>\n\t<span style=\"font-size:16px\">3 large eggs<\/span>\n<\/p>\n<p>\n\t<span style=\"font-size:16px\">150g granulated sugar<\/span>\n<\/p>\n<p>\n\t<span style=\"font-size:16px\">150g plain flour<\/span>\n<\/p>\n<p>\n\t<span style=\"font-size:16px\">30g cornflour<\/span>\n<\/p>\n<p>\n\t<span style=\"font-size:16px\">1 tsp baking powder<\/span>\n<\/p>\n<p>\n\t<span style=\"font-size:16px\">pinch of salt<\/span>\n<\/p>\n<p>\n\t<span style=\"font-size:16px\">1\/2 tsp vanilla extract<\/span>\n<\/p>\n<p>\n\t<span style=\"font-size:16px\">90g butter, melted<\/span>\n<\/p>\n<p>\n\t<span style=\"font-size:16px\">4 &#8211; 5 ripe medium pears, peeled, cored, cut into chunks<\/span>\n<\/p>\n<p>\n\t<span style=\"font-size:16px\">icing sugar to dust<\/span>\n<\/p>\n<p>\n\t<span style=\"font-size:16px\">Preheat oven 180C. Line the base of a 23cm spring form tin with baking parchment. In a large bowl, whisk the eggs and sugar until light in colour and fluffy. In a seperate bowl, sift together the flour, cornflour, baking powder and salt. Whisk into the egg mixture, followed by the vinilla and melted butter. Fold in the pears with their juices. Pour the mixture into the tin. Bake for about 45 mins, until golden and a knife inserted into the centre comes out clean. Cool on a wire rack, remove the parch-ment and dust the top with icing sugar.
